Who doesn’t love having pancakes for breakfast?! It is a family favorite in our house that’s for sure!
Tomorrow my colleagues and I are doing a cooking class with local seniors and since many seniors tend to be low on their overall protein intake we decided to find protein rich recipes for them to try! We came across a recipe for high protein pancakes and I thought it sounded delicious. I tried it out at home and it was such a hit that I thought I would share it!
Note that these pancakes are rich in the banana flavour and also don’t puff up as regular pancakes. I personally love that, because I like thin pancakes I can roll up with a little bit of butter and cinnamon sugar 🙂
1 cup rolled oats
1 tsp vanilla
1 tsp cinnamon
2 tsp baking powder
2 whole eggs
1/2 cup cottage cheese
1/4 cup milk
Combine ingredients in a blender until smooth.
Pour batter into griddle and cook until bubbles form on top of pancakes. Flip and cook until golden brown.
